{"id":14595,"date":"2019-04-18T12:03:27","date_gmt":"2019-04-18T17:03:27","guid":{"rendered":"https:\/\/traun-photo.com\/dan\/?p=14595"},"modified":"2024-05-01T07:41:31","modified_gmt":"2024-05-01T12:41:31","slug":"ramp-butter","status":"publish","type":"post","link":"http:\/\/traun-photo.com\/dan\/ramp-butter\/","title":{"rendered":"Ramp Butter"},"content":{"rendered":"\n<p>Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 lb butter &#8211; salted or unsalted<\/li>\n\n\n\n<li>Approximately 25-30 ramps &#8211; leaves and bulbs<\/li>\n\n\n\n<li>1 tbsp lemon juice<\/li>\n\n\n\n<li>1 tsp kosher salt<\/li>\n\n\n\n<li>1 tsp black pepper<\/li>\n<\/ul>\n\n\n\n<p>Instructions<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Clean and trim raw ramps<\/li>\n\n\n\n<li>Bring pot of water to a boil; blanch ramps for 30 seconds<\/li>\n\n\n\n<li>Drop them in cold water after and pat dry<\/li>\n\n\n\n<li>Rough chop the ramps. <br><strong>A food processor will make the rest of the process much easier.<\/strong><\/li>\n\n\n\n<li>Add half the raps to the food process and pulse.  Add the other half and pulse again.<\/li>\n\n\n\n<li>Add butter a chunk at a time, pulsing after 2-3 chunks until all butter is incorporated.<\/li>\n\n\n\n<li>Add lemon juice, salt and pepper and pulse some more<\/li>\n\n\n\n<li>Remove mixture from food processor and pack into storage containers of your choice.  I simply wrap a good amount in parchment paper and then store in freezer bag.<\/li>\n<\/ol>\n\n\n\n<p>Ramp butter is excellent on toast or a grilled baguette. I also use ramp butter in scampi; simply add some white wine to the butter.
